Coconut Curry Broccoli Soup

This recipe came about because I bought a HUGE bag of broccoli from Costco – having high hopes that my husband and I could eat it all within one week or before it spoiled. We were both over broccoli after 2 days. So I froze the rest of it and figured I would figure out what to do with it.

And this soup recipe was born.


I LOVE curry anything and I always try different variations when I use curry ingredients. The weather is getting cooler so this recipe is perfect for snuggling up on the couch with a hot bowl of soup.

Plus, it’s packed with Vitamin C, Vitamin A and Vitamin B6. All of which will help keep your immune system strong while the cold and flu season is creeping up on us.

Vegan Coconut Curry Broccoli Soup
This vegan coconut curry broccoli soup is nutritious and sure to keep your immune system guarded. It has a creamy flavor from the coconut milk and nutritional yeast. No dairy products needed!

Instructions
  1. In a dutch oven or large pot heat avocado oil over medium high heat. Add onions, carrots and celery. Cook for a couple of minutes until the onions are translucent, then add the garlic.
  2. Continue stirring as to not let the garlic burn. Cook for a couple more minutes until garlic is aromatic. Add turmeric and curry paste. Stir continuously for one minute.
  3. Add broccoli and cook for a couple of minutes until the broccoli starts to turn a vibrant green color.
  4. Add vegetable broth, salt and pepper to taste. Bring to a boil, reduce heat and simmer until broccoli is soft and cooked through. Timing depends on if your broccoli is fresh or frozen.
  5. Puree soup with an immersion blender. If you do not have an immersion blender use a high-powered blender.
  6. Add coconut milk and nutritional yeast, simmer for a couple of minutes. Mix thoroughly. Remove from the heat and serve.
